Margarita Sorbet

*Gringo voice* CINCO DE MAYO! What better way to celebrate than with a sizeable helping of margarita sorbet


  • Ice cream maker (not totally necessary)
  • Juicer
  • Saucepan
  • Bowl


  • 350g sugar
  • 500ml water
  • 150ml lime juice
  • Juice of half a lemon
  • 100ml tequila
  • 100ml cointreau
  • Lime peel to mix in/garnish


  1. Water and sugar in the pan on middling heat until the sugar dissolves
  2. After the sugar has dissolved turn up the heat to boil the mixture for a minute
  3. Towards the end of the minute add the lime and lemon juice and the alcohol. Make sure it is near the end of the minute or the alcohol will boil off
  4. Take off the heat and put into a bowl in the fridge and wait for it to cool down enough to churn or freeze
  5. Once cooled either churn the sorbet, adding in the lime peel (couple of teaspoons will do) or put straight in the freezer

You can either enjoy it as a cooling sorbet on a hot afternoon or tank it as a margarita slushy
